Regina Graeter's sorbets started out simple, with a blend of fruit juice, sugar, and water, but then she insisted on a painstaking process to turn her simple recipe into something sublime. We still freeze all of our sorbets in small 21/2 batches, just like Regina did over 100 years ago.
