The Holidays have arrived and we teamed up with Paulie Cooks to create the perfect Holiday treat! This delicious combo of our Handcrafted French Pot Ice Cream and Liège Waffles will leave a lasting impression on friends and family. What are you waiting for? Grab some Graeter’s Ice Cream and start whippin’ up some waffles! Check out the recipe and more from Paulie Cooks below.
"Finally got my box of @graeters ice cream in the mail and it did not disappoint. What do you with some of the best ice cream you’ve ever had?! Duh make it into more snacks. Liège waffle ice cream sandwiches, yes I’ll have all of them please. Black raspberry chip and mocha chocolate chip up first. 4 more to try. You need this ice cream in your life."
- 1. Room temp unsalted butter cut into cubes
- 2. Yeast. Brown sugar. Warm water. And milk all together and let yeast bubble
- 3. Eggs. Vanilla. Salt. And yeast mix all into a bowl or mixer.
- 4. Add the flour. And start kneading, incorporating the butter a few tablespoons at a time.
- 5. It should be a pretty sticky dough but pulls away from the bowl easily. Let it sit for an hour and rise and then refrigerate
Let it refrigerate for 24 hours/overnight.
Then. Give yourself an hour before you’re ready to cook. Take the dough out of the fridge and let it soften. Then knead in the pearl sugar. Which is super easy to find on amazon. That’s the only place around me that I found it.
The dough should make about 32 quarter waffles. I cut them all portion them by weight, about 65g
Play with it. They’re awesome.

Cincinnati-Based Brands Bring Beer and Dessert Together to Create Stout & Pretzels Ice Cream
CINCINNATI, OH (September 19, 2017) – Graeter’s Ice Cream, a 147-year-old, family owned craft ice cream company, and Braxton Brewing Co., a local brewing company, introduce first-of-its-kind Stout & Pretzels Ice Cream. This Graeter’s flavor has been inspired by the success found in Graeter’s and Braxton’s previous collaborations – Black Raspberry Chocolate Chip Milk Stout and Blueberry Pie Brown Ale. The unique ice cream was previewed at Braxton Brewing Co.’s booth at Oktoberfest Zinzinnati and will be introduced for purchase in Graeter’s scoop shops and online the first week of October.
The one-of-a-kind Stout & Pretzels ice cream is a creatively crafted ice cream influenced by Braxton Brewing Co.’s Dead Blow Tropical Stout. Eighty pounds of macerated dates are brewed with a Dry English Ale yeast to provide a vibrant, fruity and tropical aroma with a subtle amount of fruity esters. Dead Blow is a dry, full bodied, smooth stout that is lighter on bitterness.
Similarly, Graeter’s Stout & Pretzels ice cream will mimic the flavorful notes found in Braxton’s brew to create an ice cream with crunchy pretzels to compliment each distinct note. This sweet treat will only be available for purchase for a limited time.
“Having partnered with Braxton Brewing Co. on this year’s Black Raspberry Chocolate Chip Milk Stout as well as the Blueberry Pie Brown Ale, it’s exciting to be able to turn the tables and incorporate Dead Blow into a new ice cream creation,” shares Robert Graeter, 4th generation co-owner and Chief of Quality Assurance at Graeter’s Ice Cream. “As true craft brands, we are both passionate about and committed to preserving our authenticity in each new culinary adventure.”
"We’re a proud Cincinnati brand, and it’s wonderful to be able to surprise and delight both Braxton and Graeter’s fans through this collaboration," said Jake Rouse, Co-Founder and CEO. "From concept to creation, it’s always a thrill to be able to be a part of something that we know will bring a smile to consumers’ faces, as we know Graeter’s new Stout & Pretzels Ice Cream will."
Regina Graeter’s original recipes and old-world French Pot process have stood the test of time – even as mass-produced ice cream floods the market. This innovative collaboration between Graeter’s Ice Cream and Braxton Brewing Co. is an ode to her time-tested recipes, taken to an even higher level by the addition of Braxton Brewing Co.’s passion for crafting the perfect beer.

It ultimately gives consumers a unique way to support this increasingly important cause. “Our support of the Cure Starts Now is entering a new decade” said Chip Graeter, 4th generation coowner of Graeter’s. “Ten years ago we created this special ice cream flavor and have been committed to the cause ever since. the opportunity to make a donation directly to The Cure Startes Now Foundation. Graeter’s will offer a coupon booklet with up to $20 in savings for every donation of $5 or more.

“It’s wonderful that two amazing Cincinnati businesses are helping to support a cause that started right here at home in Cincinnati,” shared Keith Desserich, Co-Founder and Chairman of the Board at The Cure Starts Now.. “Through Graeter’s support, we’ve been able to raise nearly $500,000 in new cancer

What a gift it is to be a part of so many families' special days: birthdays, anniveraries and so, so much more…
But when one of our biggest fans invited us to help "spoof" her dad for his birthday celebration ... to help her hedge her chances at winning their ongoing "BIG CHIP CHALLENGE" ... well, watch what happens when one special pint was packed by the jokesters in our plant.
One pint: 98% chip. The other: 98% ice cream. Happy birthday Dad! Hope you had a great day!
From the first taste, you can tell it's something special.
Graeter’s is the last family-owned authentic small batch ice cream maker still dedicated to the French Pot® Process. Our artisans pour and swirl only the finest ingredients into each spinning, 2½ gallon French Pot® freezer. The resulting ice cream is so dense and rich, due to the almost total absence of whipped-in air, that an
artisan must remove it with a paddle. With ice cream so thick and chocolate chips so big, every pint has to be hand packed.
